I keep hearing about different ways to make the super-fast, boxed cake mix cookies. Although I prefer my own from scratch recipes, these have been a lifesaver on many an occasion when I needed a quick dessert or treat.
Quick Butter Cookies
| 8 ounces cream cheese (1 package) 1/2 cup butter, softened 1 egg 1/4 teaspoon vanilla extract 1 18.5-ounce package yellow cake mix 1/4 cup powdered sugar Preheat oven to 350 degrees. In a medium bowl, cream together the cream cheese and butter. Stir in the egg and vanilla. Add cake mix, and stir until well blended. Roll into 1" balls and then roll the balls in the powdered sugar. Place 1 inch apart onto an ungreased cookie sheet. Bake for 10 to 13 minutes. Remove from baking sheets to cool on wire racks. Ideas . . . You could roll the cookie balls in cinnamon and sugar. Pretty cookies happen if you dip one side of the ball in colored sprinkles and press down slightly on the cookie sheet. You don't have to stick to a yellow cake mix! |
