More on enjoying apple season!

No time to make a pie and the apples are there and waiting for attention? This is a good way to use up apples and provide an inexpensive treat from your own kitchen.

Apple Fritters
1 cup all purpose flour
1/4 cup granulated sugar
1 teaspoon salt
1 1/2 teaspoons baking powder
1/3 cup milk
1 egg
1 cup chopped apple
1/2 cup powdered sugar

Combine the flour, sugar, salt, and baking powder. Add in the milk and egg, beating until you have a smooth batter. Gently fold in the chopped apple. Drop by small spoonfuls into deep hot oil nd fry for about 2-3 minutes. They should be golden brown.

Drain on paper towels and roll in the powdered sugar while warm. Serve hot or warm although a few leftover ones the next day aren't too bad.

Ideas . . .Instead of the powdered sugar, try a cinnamon/sugar mixture.
Soak and drain the chopped apples in a bit of brandy before folding into the batter.
Try chopped pears for a different taste.
