Banana Bread

This is a time-honored way to use up those aging bananas sitting on your counter. You can bake the batter in a loaf pan or in a muffin pan for lunchbox treats.

My Favorite Banana Bread
1 1/2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1 large egg
3 pureed bananas
3/4 cup granulated sugar
1/4 cup cooking oil
1 teaspoon vanilla extract
Grated zest of one lemon
1/2 cup chopped toasted almonds

Vegetable spray the bottom and about one inch up the sides of a loaf pan.

In a mixing bowl, put in all the ingredients. Beat on low for about two minutes until everything is well incorporated. Pour batter into prepared pan and bake in a preheated 350-degree oven for approximately 45-55 minutes.
