| This is a great loaf to have on hand for quick breakfasts on busy, holiday mornings. You can butter it or not and enjoy it with tea, coffee, or hot cocoa. Spicy Ginger Orange Pumpkin Loaves 2 eggs 1/4 cup vegetable oil ½ cup molasses ½ cup brown sugar 1/4 cup milk 2/3 cup pumpkin 2 cup flour 2 teaspoons baking powder ½ teaspoon baking soda ½ teaspoon cinnamon 1 teaspoon ginger 1/4 teaspoon cloves 1/4 teaspoon nutmeg 2 teaspoon vanilla extract 1 tablespoon grated orange zest Directions In a medium bowl, beat egg and oil. Add milk, brown sugar, molasses, and pumpkin, and beat to combine. Sift flour, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg, vanilla, orange zest, and add to wet ingredients. Beat until smooth. Pour into a vegetable oil sprayed loaf pans. This recipe makes two loaves. Bake at 350 degrees for 40-45, or until a tester comes out clean. |
